Recently I’ve been thinking about one of the first “recipes” I made as a kid: Sweet Chex Mix, which I had created for an appetizer party at my neighbors’ place. Though I didn’t win the competition for best appetizer, sometimes I think about this recipe. It used chocolate Chex, mini marshmallows, M&Ms, and pretzels all coated in a toffee sauce and baked. I’ve been thinking of a good way to make this mix portable while still keeping it simple. Finally I landed on a cereal bar format. The bars include all the main ingredients from the original mix, and are coated in a mix of toffee sauce and melted marshmallows to give a softer texture.

By turning the Chex Mix into bars, there’s no need to bake anything in this recipe. Simply heat the toffee mixture and marshmallows, stir in the mix-ins, and chill the bars for about 1 hour or until fully cooled. They take about 10 minutes of active prep time, if that!
As with many of my recipes, these bars are totally customizable. Feel free to remove or swap any ingredients to your liking. Just ensure to have a total of 6 cups of mix-ins. Enjoy!

Chex Mix Bars are a combination of sweet toffee Chex Mix and Rice Crispy bars. Perfect for summer BBQs, picnics, and weekends at the lake, these bars take about 10 minutes of active prep and are ready in 1 hour. Make it your own by swapping mix-ins for your favorites. Enjoy!
Ingredients
- 1/2 cup salted butter
- 1/2 cup tightly packed light brown sugar
- 4 Cups mini marshmallows + 1/2 cup for mix-in
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 4 cups Chocolate Chex cereal
- 1 cup pretzels, roughly chopped
- 1/2 cup mini M&Ms + 1/4 cup to top
Directions
- Prep Pan: Grease a 9 x 9 baking dish or line with parchment paper. Set aside.
- Melt Butter and Sugar: Melt the butter and brown sugar together in a large pot over medium heat. Stir continuously and bring to a simmer. Allow the mixture to bubble for 5 minutes.
- Add Marshmallows and Melt: Add in the marshmallows and stir continuously until fully melted.
- Add Mix-Ins: Add the vanilla and salt and stir. Add in Chocolate Chex and pretzels. Mix until all pieces are coated. (Note: Some will break). Add in the M&Ms and additional mini marshmallows, stirring lightly to avoid many M&Ms melting.
- Chill: Pour the mixture into the baking dish and press into an even layer with a spatula. Add some more M&Ms to the top. Cover the bars and chill in the fridge for at least one hour or until fully cooled. Cut into squares and serve.
- Store: Store covered at room temp for 3 days or in the fridge for up to five.
